Chicken Broccoli and Sweet Potato Sheet Pan Dinner
Yield: 4 servings
Ingredients:
- 2 medium sweet potatoes
- 4 Tbsp olive oil , divided
- 1 1/2 lbs boneless skinless chicken breasts
- 4 cups broccoli
- 1 red onion , diced
- 3 cloves garlic , minced
- 3/4 tsp dried thyme , sage, parsley and rosemary
- 1/8 tsp nutmeg
- Salt
- Pepper
- 1/2 cup pecans
- 1/3 cup dried cranberries
Directions:
- Preheat oven to 400° F.
- Line pan with parchment paper.
- Peel and cube sweet potatoes.
- Coat potatoes in olive oil.
- Bake for 15 minutes.
- Dice chicken into 1 1/4" pieces.
- Dice broccoli and onion.
- Mince garlic.
- Toss veggies in olive oil and spices.
- Add remaining ingredients to pan.
- Bake 16 - 20 minutes.
- Add pecans and cranberries.
